Simone Dewell - Co-owner, Head Gardener, Holistic Therapist, Chief Cook & Bottle Washer, overly optimistic nature lover
Simone is at the heart of this peaceful glamping retreat in North Suffolk. Her vision is simple: to offer a place where people can slow down, breathe deeply, and reconnect with the natural world
Alongside running Hill Cottage Holidays, Simone brings a wealth of professional experience from her career in project management, which gives her a unique blend of structure, clarity, and organisational skills — qualities that shape the smooth, guest‑centred experience at Hill Cottage.
Simone is also a qualified holistic therapist, trained in reflexology, aromatherapy massage, Swedish massage, Indian Head Massage, and lymphatic drainage, she brings a nurturing, intuitive approach to all her treatments.
Simone's understanding of wellbeing runs deeper than treatments alone; she grows nearly all of the vegetables and fruit at Hill Cottage and her love of the outdoors and nature is woven into the atmosphere of the site.

Whether she’s tending to the woodland paths, digging up vegetables, refining guest resources, or guiding major organisational programmes in her corporate role, Simone brings the same qualities: care, clarity, and a deep commitment to helping people feel grounded and inspired.

Jason Middleton - Co-owner, Jack of All Trades, Chief Bird Spotter and Keeper of the Sacred Woodland
Jason has a degree in the Rural Environment, studied an MA in Rural Policy at the Royal Agricultural College, and is also a Fellow of the Royal Geographical Society. Together with running Hill Cottage, Jason has a career managing a team of business advisers, who over a 12-year period have provided support to in excess of 17,000 businesses.
Jason has had a diverse career, working as a professional photographer, teaching ecology, conservation and habitat management, and working on a range of community, economic and environmental projects, including co-author of Norfolk’s first Rural Strategy. He established Norfolk’s Farming Conference, trialled the use of bio and cooking oils in domestic and commercial boilers to develop the EU/UK standard for bio heating oil, and developed Road Tax Banding with the Visual Band for low emission vehicles we see on electric vehicles today.
Jason enjoys the great outdoors and is still a keen photographer. His passion for sustainability and conservation is at the core of what he and Simone wish to achieve at Hill Cottage.

Miles Folkes - Resident Scientist, Chief Wood Splitter and Stacker!
Miles is Simone's Son and is currently residing at Hill Cottage whilst he completes a PhD in Water Engineering at the UK National Research Facility for Water and Wastewater Treatment. Miles has previously studied Geography and Environmental Sciences at The University of East Anglia, and has a keen interest in all things environmental.
Miles helps to manage the woodland, supporting our plans to restore them to a healthy and vibrant ecosystem. He also helps with the day to day management of the whole property to make sure your stay here is the best it can be.

Philippa Robinson - Holistic Therapist, Slightly Cooky Mancunian, often found in conversation with cows in local fields!
Phillipa is a bubbly, intuitive, and highly experienced holistic therapist with a passion for helping people reconnect with their bodies, restore balance, and find space for calm in their everyday lives.
With a background rooted in natural wellness and hands‑on therapeutic practice, she brings a grounded, compassionate presence to every session.

Her approach blends technical skill with genuine care. Phillipa believes that healing is most effective when people feel safe, heard, and supported, and she takes time to understand each client’s needs before tailoring her treatments. Whether someone is seeking relief from tension, support through life’s transitions, or simply a moment of stillness, Phillipa creates an environment where they can fully unwind.

Over the years, she has developed a reputation for her intuitive touch, her ability to put clients at ease, and her commitment to ongoing learning. She continues to expand her knowledge of holistic therapies, ensuring her treatments remain both nurturing and effective.

Inky and Cinders - Pest Control Officers
Inky and Cincers are two barn cats rescued from the local Cats Protection League. They are brother and sister and have been here at Hill Cottage for three years. The playful duo keep the dogs in their place, are totally unperturbed by the chickens but don't like to be picked up, although they will let you tickle their bellies!

Bertie - Chief Security Officer and Chief Chicken Bum Sniffer
Bertie is a Romanian rescue - a mix of Great Dane, Alsation and Labrador. He likes to supervise everything that happens at Hill Cottge and is especially good a looking after the chickens and cats!

The Chickadees - Daphne, Lily, Marigold, Dahlia, Rosie, Bluebell and Notty (Forget-me-not)
The chickadees are a group of rescue chickens, previously commercial organic free range hens, we have maintained their organic status and now they all roam freely around our 3 acre property. Like Bertie, The Chickadees also have to supervise everything that happens at Hill Cottage, they are friendly and inquisitive - keep you tent screens zipped up or you might find you have a visitor!

Mabel - Chief Noise Monitoring Officer
Mabel is also a Romanian rescue - she is a mix of Carpathian Shepherd Dog and Jack Russell (yes the mind boggles). Mabel can hear a pin drop from 3 miles away... despite being deaf in one ear!
